  • Syme on Yarra vineyard. Grown as biological farming, no pesticides, fungicides or herbicides used, mainly organic farming with some BD preps. Soil is traditional Yarra duplex loam over mud rock with some red clay and Moonbulk soil transitioning through. 100% whole bunch ferment with indigenous yeasts. Pressed to older 500 and 300L barrels for 10 months. Tannins are ripe and rolling smooth this year, some creamy chestnut like texture to the mid palate. 2015 Vintage.  13.5% alc/vol.  750ml Bottles.
  • Cab field blend planted in 1981 from the Wesburn soils. At 210m above sea level. Interplanted. All picked at once. Cab grown where Cab 'shouldn't' grow... but in true Mac style, it shines through and proves that totally wrong. Pretty and substantially brilliant. 2015 Vintage.  12.5% alc/vol.  750ml Bottles.
  • The richness and spiciness of the Syrah, the prettiness of the Pinot, the varieties get along brilliantly. Slippery, spicy, floral and delicious, this is one experiment that has definitely paid dividends for Mac. 2015 Vintage.  12.5% alc/vol.  750ml Bottles.
  • This is a fresh and aromatic pétillant naturel made from Semillon, Sauvignon Blanc, Muscadelle, and Chardonnay. Lean and dry with ripe stone fruits and lemon citrus. 2016 Vintage.  12.5% alc/vol.  500ml Bottles.
  • Timo makes the Syrah in the same way as his charismatic Dr. Mayer Pinot Noir with 100% whole bunches during ferment. In this part of the Yarra it is possible to make sublime Syrah. Timo's is ethereal, ferrous and a little mysterious, an excellent example of the variety's potential in the region. Lovers of spicy, detailed Syrah with power and structure - you'll want to try this... But you'll need to be quick.
  • The fruit was grown on relatively old Gamay vines in the Yarra Valley. The near-perfect 2017 season giving Timo beautifully balanced fruit. Gamay can be a simple affair, but in the hands of Timo with all it's wild and stalky edges, this variety sings.
